So that bread is not lacking

Saving and much efficiency are needed these days. When fuel is scarce, there must be plenty of cleverness and creativity to overcome the difficult situation without affecting vital services within the legal frameworks.

Provincial Company of Food Provisions and Miscellaneous Items (EPPAAV) is in that goal, an entity with the difficult challenge, above all, of maintaining production and distribution of bread for the ration book.

Yamila Quiñones Fernández, director of technology and development in this entity, said that at this stage they organize the distribution with animal or human traction vehicles moved by freelancers.

Quiñones said that in each municipal Basic Unit Enterprise (UEB) contracts with these workers are made and the payment is adjusted according to the kilometers, hence the call to all interested freelancers to be submitted in their respective municipalities and make proper contracts.

It is up to the Alimentary management to guarantee the boxes that this transfer demands, so that it complies with the hygienic standards required. "It is not a new practice, because during other difficult stages the distribution was in charge of animal-powered vehicles."

Currently they are evaluating the possibility of relocating consumers who wish to buy bread directly at the factory's point of sale, in order to reduce the number of breads to be moved. And in each production center they study the variant of making a 240 gram bread that can be delivered every three days, an alternative that can generate a lot of savings, especially in far communities.

Likewise, the directive found other measures based on savings, such as the immediate distribution of raw material to the stores of the processing centers, so that each bakery, especially the farthest ones, has several days of coverage for elaboration normed bread.

Quiñones noted that, in addition, they may experience effects on the production of confectionery products, given by the dependence on fuel to transfer raw material to the processing centers, especially egg, which can only be purchased in Bauta.

Salt cracker lines also depend on fuel ; therefore, they produce sweet biscuit as long as this situation does not improve.

Beyond the complexity of these days, it is time to review mechanisms, link production and distribution chains to last.

Saving is needed today due to scarcity, but, even if we have more tomorrow, this should be a word to write it and think always in capital letters.
